Flavorful Pickled Red Onions

  • Large red onion – Trimmed, peeled & cut into thin slices. Red onion is recommended on this one. They tend to be milder in flavor and slightly sweeter than other varieties.
  • Apple cider vinegar – Apple cider vinegar has a tart, tangy, and slightly sour taste with a hint of fruity sweetness. Adds complex flavor.
  • Red wine vinegar – Red wine vinegar is an acidic, tangy liquid made by fermenting red wine until the alcohol turns into acetic acid. It has a deep ruby color and a sharp, fruity flavor, making it a popular pantry staple for salad dressings, marinades, and pan sauces.
  • Granulated sugar – When possible, I prefer to use organic granulated sugar. It’s less processed than conventional refined sugar, retaining some of the molasses, which contains vitamins, minerals, and antioxidants. Additionally, organic sugar is produced without synthetic pesticides or herbicides.
  • Kosher salt – Kosher salt is recommended here. If need be, table salt can be used with caution. Table salt is finer and more dense than kosher salt, so a teaspoon of table salt will contain more actual salt than a teaspoon of kosher salt. When substituting, use about two-thirds the amount of table salt specified in a recipe using kosher salt. 
  • Ground allspice – Ground allspice is a single, pure spice made from dried, unripe berries of the Pimenta Dioica evergreen tree – also known as the allspice tree. Despite its name, it is not a mix of multiple spices, but it gets its name because it tastes and smells like a warm blend of cinnamon, cloves, and nutmeg.
  • Red pepper flakes – Also known as Peperoncino flakes, these spicy flakes are optional but recommended. Just a pinch can add heat and flavor to the pickling liquid.

Flavorful Pickled Red Onions

  • Trim both ends of the onion.
  • Slice the onion in half, from top to bottom.
  • Remove the outer peel.
  • Lay the cut surfaces of the onion onto the cutting board.
  • Slice into half moons about 1/8″ thick using a very sharp knife.
  • If preferred, a mandoline works well for slicing the onions, especially if you like super thin slices.

  • In a medium saucepan, whisk together the apple cider vinegar, red wine vinegar, sugar and salt.
  • Place the pan over medium-high heat and bring the mixture to a boil.
  • Whisk until the sugar and salt fully dissolve.
  • Remove the pan from the heat and whisk in the allspice and optional red pepper flakes.

Flavorful Pickled Red Onions

  • Carefully add the sliced onion to the pan.
  • Gently stir to combine.
  • Allow the mixture to cool completely at room temperature, stirring occasionally.

  • Pour the entire mixture into a glass container.
  • Cover tightly with a lid and refrigerate until thoroughly chilled.
  • Canning jars work well here, either one large or two small.
