Do you guys remember that old standard where you would simply mix some of your jarred salsa with cubes of Velveeta? The whole thing would be heated up until it was well blended and we thought it was the best dip ever.

We’re always on the lookout for the most natural foods possible in my household. Highly processed food products aren’t usually welcome. - As the onion and garlic are hangin’ out in the saucepan, it’s a good time to get the shrimp prepped.
- You can always just quickly chop it up but I usually cut each shrimp into large chunks then “tear” those chunks into smaller bits.
- The rougher edges work out well when added to the mix …then scooped up with the chips.
- When the onion and garlic have begun to caramelize – about 5 minutes of sautéing – it’s time to add the shrimp to the pan.
- Give it a few minutes of gentle stirring as the mixture warms up.
- Remove the mixture from the pan and set it aside to keep warm.
- It’s now time to heat the tomatoes and cheese in the waiting saucepan.
Be sure the cheese is completely melted.
- While that’s happening, chop up those green onions …their time to be added is quickly approaching.
- The shrimp mixture will be added to the melted cheese combo along with the green onions.
Literally translated, chile con queso is Spanish for “chile with cheese” and is usually referred to as simply queso. To be truly authentic, it consists of just melted cheese and chili peppers.
But really, how can you not add tomatoes to the mix? And shrimp? It’s just too good of a combination not to make it happen.

Ingredients
- 2 teaspoons butter
- 1/2 cup chopped onion
- 3 garlic cloves, minced
- 16 ounces cooked shrimp, peeled & deveined (roughly chopped)
- 16 ounces shredded cheddar cheese
- 1 (10-ounce) can diced tomatoes with green chiles (undrained)
- 1 (10-ounce) can diced tomatoes with green chiles (drained)
- 1/2 cup chopped green onion
- green onion strips, for garnish
- tortilla chips, for serving
- fresh veggies, for serving (optional)
Instructions

Melt butter in a large saucepan over medium heat. Add the onion and garlic; sauté for 5 minutes or until tender, stirring frequently. Add the chopped shrimp and cook for 2 more minutes, stirring frequently. Remove the mixture from pan; cover and keep warm.

Add the cheese and tomatoes to the pan. Cook over medium-low heat for 5 minutes or until the cheese thoroughly melts. Stir in the shrimp mixture along with the chopped green onions.

Garnish with green onion strips. Serve with tortilla chips and, if desired, fresh veggies.
