ej's awesome fruit salsa

Colorful & delicious. Refreshing alternative to tomato salsa.

Ingredients

  • 1 cup fresh mango, diced
  • 1 cup fresh strawberry, hulled & diced
  • 1/2 cup fresh pineapple, diced
  • 1 jalapeño, seeded & minced
  • 1/4 cup fresh cilantro, finely chopped
  • 1/2 small red onion, minced
  • 1/4 cup green onion, thinly sliced
  • 1 lime, juiced
  • 3 teaspoons creamed honey (or good quality local)
  • 2 teaspoons fresh ginger, grated or minced
  • 1 pinch sea or kosher salt, to taste

Instructions

  1. Mix all fruit, onions, jalapeño and cilantro together in a large bowl.

  2. Whisk lime juice, honey, ginger and salt in a small bowl until it comes together. Pour over fruit mixture. Stir to combine.

  3. Enjoy right away with chips. Also delicious served over grilled fish or chicken.
