This irresistible Broiled Savory French Toast provides the perfect balance of sweet and savory. Add a fried egg and some bacon on the side. Satisfying and delicious.
We do love a hearty breakfast now and then at my house. And french toast is always near or on the top of the list. Although depending on the moment, the traditional somewhat sweet variety doesn’t seem so appealing.
This version hits the spot with a crispy parmesan crust coating the thyme-infused custardy bread. Add a drizzle of maple syrup and enjoy.
Let’s gather the ingredients for your Broiled Savory French Toast…
- Large eggs
- Milk
- Kosher salt
- Fresh thyme
- Soft sandwich bread
- Freshly grated Parmigiano-Reggiano
- Maple syrup
Before we get started, let’s talk about the bread.
What you see here is homemade sandwich bread that I bake on a regular basis. You can use any soft sandwich bread for this, but the bread must be sliced on the thicker side. Ideally, an inch thick or at the very least 3/4″ thick.

This is a quick & easy one. In about twenty minutes, your delicious Broiled Savory French Toast will be ready to enjoy.
- Place an oven rack about 4 inches from the broiler.
- Preheat the broiler to high.
- In a 9×13-inch baking pan or dish, whisk together the eggs, milk, salt and chopped thyme.
- Lay the slices of bread in the pan and let them sit for 5 minutes.
- Flip the slices and let them sit for another 5 minutes.
- Almost all of the custard should be absorbed by the end of the 10 minutes.
- Place one large or two medium cooling racks on a large rimmed sheet pan.
- Lay the slices of bread on top of the racks.
- Scatter half of the grated cheese over the tops.
- Transfer to the oven and broil for 2 1/2 to 3 minutes, until lightly golden.
- Be sure to keep an eye on them during the final minutes so they don’t burn.
- Using a spatula, flip the slices and sprinkle with the remaining cheese.
- Broil again for 2 1/2 to 3 minutes more, until evenly golden and crispy.
- Serve the french toast immediately garnished with thyme sprigs on top and pure maple syrup on the side.

- 1 tablespoon fresh minced thyme (plus extra sprigs for garnish)
- 6 slices day-old soft sandwich bread (3/4" to 1" thick)
- 1 cup freshly grated Parmigiano-Reggiano cheese (3 ounces)
- maple syrup, for serving
